Deep sleep does break wudu because you lose control of your body. When you sleep deeply, you may pass wind or other things without knowing it.
Light sleep while sitting or leaning against something does not break wudu. But sleeping while lying down requires making wudu again before praying.
Passing wind, urinating, and unconsciousness also break wudu and require purification again.
